Introduction

Mumbai, formerly known as Bombay, is not just India's commercial hub; it's also a melting pot of flavours from across the subcontinent. As a megapolis, Mumbai offers a microcosm of Indian cuisine, featuring dishes from various regions alongside its own unique local specialities. People from all over India have moved here over the centuries whether for business, trade or education and have brought their unique cuisines with them. This has arguably made Mumbai the food capital of India.

Here are some of the food experiences that we will experience together. I have chosen them, especially for you so that I can showcase the various cuisines, histories and stories of India and share the many layers that make up this vast and varied cuisine.

I have also been mindful that the restaurants we go to are safe and hygienic and can cater to particular food preferences. I’m excited to help you understand Indian food as well as India more deeply, through my lens of East and West as I put everything we eat, see and do in perspective. Join me on this once-in-a-lifetime food adventure!

Traditional Indian Dining

Gaylords Restaurant

In the heart of Mumbai, Gaylords Restaurant is a testament to the city's rich culinary heritage. Established in 1956, this iconic eatery has been serving traditional Indian cuisine for over six decades. Here we will dine on many dishes that you may be familiar with from the UK, but enjoying them in their native country is a whole new experience!

History and ambiance:

Stepping into Gaylords is like taking a journey back in time. The restaurant's classic décor, complete with chandeliers and vintage photographs, creates an atmosphere of old-world charm. It's a favourite among locals and tourists alike, known for its impeccable service and consistent quality

Signature dishes:

Our menu will feature classics such as butter chicken, a creamy, tangy delight that pairs perfectly with their freshly baked naan bread. For vegetarians, the paneer tikka masala and black dal will be joy to feast on. I’ll make sure you eat well and plenty!

Street Food Adventures

Chetana Restaurant & Chowpatty Beach

No visit to Mumbai is complete without experiencing the street food culture at Chowpatty Beach.

As the sun sets, Chowpatty Beach comes alive with food stalls and vendors. The atmosphere is electric, with locals and tourists alike enjoying their favourite snacks while watching the waves.

I’ll take you on a walk on the beach and we’ll see stalls of India’s best-loved street food. Mumbai’s classic bhel puri, a savoury snack made with puffed rice, vegetables, and tamarind chutney and sev puri- crispy puris topped with potatoes, onions, and chutneys. We’ll stop at each one as I explain what they are, but we won’t eat here. It’s not always hygienic to eat on the streets. From Chowpatty Beach, we’ll head to Chetana, one of south Mumbai’s best-known restaurants.

Here I have curated a unique street food experience just for you, dear guests on my tour, as it is not available to members of the public. Chetana restaurant has kindly agreed to recreate the Chowpatty Beach street food experience for us in their private dining room, complete with their waiters dressed like the beach folk!

Popular street food items to try:

At our street food feast, you will be treated to around 8 dishes to try- don't miss the vada pav, often called the "Indian burger" - a spicy potato fritter in a bun lathered with chutneys and gram flour straws. The pav bhaji, a spicy vegetable curry served with buttered rolls, is another must-try.

Khyber

On another day, I will explain to you the influence of Islamic culture on Indian cuisine. From the rule of the Mughals in the North to the arrival of the Arabs in the south, Indian food changed forever. A distinct cuisine called ‘Mughlai’ was born which is even today, one of the most popular restaurant offerings in Mumbai.

Khyber is a celebrated restaurant famous for its celebrity guest list. Its menu boasts an impressive array of kebabs, each more tantalizing than the last. From the melt-in-your-mouth Galouti kebabs to the fiery Tandoori chicken, meat lovers will find themselves in paradise. Vegetarians need not worry – the Paneer Tikka and Bharwan Aloo are equally delectable.

Ambience and dining experience:

The interiors of Khyber transport you to the royal courts of North India. With its stone walls, intricate arches, and dim lighting, the restaurant creates an intimate and regal atmosphere. The staff, dressed in traditional attire, adds to the authentic experience.

As you savour the rich, aromatic dishes at Khyber, you'll understand why it's considered one of Mumbai's culinary gems. The restaurant's commitment to using traditional cooking methods and high-quality ingredients ensures that each dish is a masterpiece of flavours.

Contemporary Indian Cuisine

Bombay Canteen

This restaurant is especially close to my heart as its founder Floyd Cardoz was my close friend while studying at the Institute of Hotel Management in Mumbai in the 80s. It represents the new wave of Indian cuisine, blending traditional flavours with modern techniques and has therefore been considered ‘cool’ since it opened a few years ago.

Bombay Canteen reimagines regional Indian dishes with a contemporary twist, using local, seasonal ingredients.

Indian wine-tasting experience:

Here we will enjoy a wine and Indian food pairing experience as the restaurant offers a curated selection of Indian wines, introducing diners to the burgeoning Indian wine industry.

Shree Thaker Bhojanalaya

It is said that a third of India is vegetarian. We will begin this day with a trip to a beautifully carved, centuries old Hindu temple where I will give a talk on the history of vegetarianism in India. We’ll also visit a Jain temple- the Jains are followers of non- violence and do not eat even root vegetables as the uprooting may harm living beings in the soil.

Our lunch will be at one of my absolute favourite restaurants- Shree Thacker Bhojanalaya. Tucked away into a tiny, bustling street in the heart of the city, once you are seated at your table, you will experience Indian vegetarian food as you’ve never experienced before. This restaurant offers an authentic taste of Gujarat, a state known for its vegetarian cuisine. Not only that, we will be treated to a bottomless thali lunch of the freshest, most delightful vegetables, lentils, snacks and desserts (not just one but three!!). The waiters have been trained to serve you endless servings of the various dishes with a smile and they will keep going until you cannot eat another morsel or you think you can’t- because they will bring around yet another delicacy you simply cannot resist!

What to expect in a Gujarati Thali:

The thali here is a feast for both the eyes and the palate. A steel plate with many small bowls, this thali has almost 30 dishes to try and enjoy. Expect a variety of vegetable dishes, lentils, rice, breads, and sweets, all served on a single platter. Don't miss the dhokla (steamed chickpea cake) and the kadhi (a yogurt-based curry).

Jimmy Boy Restaurant

I'm excited to introduce you to a gem in Mumbai's culinary crown - Jimmy Boy Restaurant. As we delve into the world of Parsi cuisine, prepare your taste buds for a journey that spans continents and centuries. The Parsis migrated from Iran to Mumbai around 1000 years ago and brought with them a unique cuisine that has integrated into the cuisine of the city and is much loved. As we enjoy our dinner, I will talk you through the history and cuisine of this fascinating community.

Highlights of the Parsi Wedding Feast:

The Parsi Wedding Feast is a highlight of this cuisine and everyone in Mumbai waits for an invitation to a Parsi wedding just for the food!

At Jimmy Boy we will enjoy an authentic Parsi wedding feast as it is traditionally served, on a banana leaf, in several mouthwatering courses. Our feast will include sali boti (mutton curry with fried potato straws), patra ni macchi (fish steamed in banana leaf), and lagan nu custard (a Parsi-style caramel custard) for a true Parsi experience.

Leopold Café

This café is not just a dining spot, but a piece of Mumbai's history.

Jaihind Lunch Home

We cannot go to Mumbai which is nestled by the Arabian Sea and not enjoy a fish lunch!

Our day will begin with a dawn visit to the local docks and fish market to see the boats bring in the early morning catch. We’ll then go back to our hotel to shower and change (remember to bring flip flops for the visit to the fish market!).

Seafood lovers, rejoice! We will be eating lunch at one of Mumbai's most beloved seafood haunts - Jaihind Lunch Home. The menu here is varied and you’ll want to sample the local fish- pomfret- and feast on the big, juicy prawns. If you are not a fish lover, fear not, Jaihind has an excellent meat and chicken offering too.

Must-try seafood dishes:

The Bombay Duck Fry (despite its name, it's actually a fish) and the Crab Masala are highly recommended. Vegetarians can enjoy their delicious dal fry and vegetable curries.

Exploring the Markets

Crawford Market

Welcome to the beating heart of Mumbai's food scene - Crawford Market. As we step into this historic marketplace, prepare to be overwhelmed by the colours, aromas, and sounds that surround us. This is where I often come to source ingredients for my recipes and to stay connected with the pulse of Mumbai's culinary world.

Variety of fruits and vegetables:

This historic market offers a dizzying array of fresh produce, spices, and household goods.

Lal Baugh Spice Market

I find this place fascinating - it's like walking through centuries of culinary traditions. The air is thick with the scent of exotic spices, each with its own story and significance in Indian cuisine. Prepare for a sensory adventure that will transform your understanding of flavours. You’ll learn about the various Indian spices as I guide you through this aromatic market and we will stop to see how bespoke spice blends are created in small mills. Customers buy their choice of spices and get them crushed in front of their eyes. You’ll have a chance to buy some of the best spices that India has to offer and I will be your happy guide!

Meeting the 'dabbawallas'

The lunchbox system in Mumbai is legendary- studied by Harvard and applauded by Prince Charles. We will meet the hardworking ‘dabbawallahs’ or tiffin carriers who transport lunches from homes to offices and even specific desks without ever making a mistake!

We will visit their meeting point outside Churchgate station and understand from them, the unique coding system of shapes and colours they use to deliver the right meal to the right recipient each and every day.

Elephanta Caves

These are a short but pretty ferry ride away from Mumbai. We will visit this historic site and understand the concepts behind Hinduism. You will be able to marvel at centuries old sculptures and rock caves that seem to be just a stone’s throw away from the modern megalopolis of Mumbai.
